White Chile Soup with Green Chile

Ingredients
  • 12 CUPS CHICKEN BROTH
  • 4 CLOVES GARLIC CHOPPED
  • 4 MEDIUMS ONIONS CHOPPED
  • 1/4 CUP EVOO
  • 2 16 OZ JAR EL PINTO CHOPPED GREEN CHILE
  • 1 TABLESPOON + 1 TEASPOON CUMIN
  • 1 TEASPOON DRIED OREGANO
  • 1/2 TEASPOON CAYENNE PEPPER
  • 8 CUPS GRILLED CHICKEN DICED
  • 2 JALAPEÑO PEPPER DICED
  • 1 CUP DICED TOMATOES
  • 1/4 CUP + 2 TABLESPOONS FLOUR
  • 2 QUARTS GREAT NORTHERN BEANS
Steps

In stock pot add oil to med-hi heat add onion, garlic and jalapeño, saute for 2 mins.

When onions are translucent, add flour and spices cook for 2 more mins.

Add chicken broth to pot stir well. Bring to boil add chicken and beans to pot.

Reduce heat simmer for 10mins then add diced tomatoes when thickened.

Serve

Garnish with a dollop of sour cream and chives.
