Red Chile Crab Bisque

Ingredients
  • 1/4 CUP 1/4" DICED RED ONIONS
  • 1/8 CUP COOKING OIL (HIGH HEAT)
  • 1/8 LB WHOLE SALTED BUTTER
  • 1/2 CUP FLOUR
  • 1/4 CUP COOKING SHERRY
  • 1 (16 OZ) JAR EL PINTO MILD ENCHILADA SAUCE (AKA RED CHILE SAUCE)
  • 1 PINT 1/2 & 1/2
  • 1 PINT HEAVY WHIPPING CREAM
  • 1/2 TBSPS CLAM BASE
  • 1/2 TBSP SEAFOOD BASE
  • 1/2 CUP HOT WATER
  • 1/4 LB SNOW CRAB
Steps

Will need (2) 1 gallon stock pots for this recipe

In one stock pot add oil and butter

Add red onions and sauté till they are soft

Add Cooking Sherry, reduce till the sherry has cooked off 1-2 minutes

Turn heat off to pot and add flour, mix in well

In second pot add - 1/2 & 1/2, Heavy Whipping Cream, Red Chile sauce

>p>Dissolve the Clam base & seafood base in 1/2 cup of water

Turn on heat to medium and whisk the mixture well, allow to come to a simmer

Now slowly add the hot liquid mixture to the flour mixture in the 1st pot

Turn on heat to low and whisk this together and slowly so as not to have any lumps

It will start to thicken up, at this point add in the Snow Crab

Now let this simmer on low for 5 minutes

If it is too thick, add a little cream; if it is too thin, a little corn starch and water can be added

For service serve with chopped chives and maybe a little warmed crab on top of the Bisque
